"Cheesy" Cashew Queso

IIIII'mmmm baaacckkk.

I've finally found my way out from the inspiration-less rock I've been living under the past couple of months and it. feels. so. GOOD. to be back! Sometimes life can get so hectic and priorities can shift without realizing it. But coming back to where I feel most creative (the kitchen) is always an amazing feeling. Especially when you nail a recipe you've been wanting to make for months! Queue this "queso" dupe. It goes great with chips, veggies, or both as a side to your favorite Vegan Sloppy Joe recipe.

Ingredients:

  • 1/2 cup shredded carrots
  • 1 c. raw cashews
  • 1/4 c. salsa
  • 1 tsp. chili pepper flakes
  • 4oz. green chili, canned
  • 1/3 c. nutritional yeast
  • 1/2 red bell pepper, diced
  • 1/2 a small jalapeño, diced (use whole jalapeno for extra heat)
  • 1 tsp. garlic powder
  • Pinch of salt
  • 1/4 c. water

Instructions:

  1. In a small pot, add carrots, cashews, and cover with water. Bring it to a boil, then back down to medium heat and cover with a lid for 20 minutes.
  2. Drain the cashew/carrot mix and add to your high-speed blender with all other ingredients. Blend on high for 1-2 minutes or till completely smooth. Serve immediately with your favorite tortilla chips and veggies!
